Quick & Simple Peanut Butter Cookies…
Gluten-free and easy to make!
Place the oven rack in the middle of the oven and pre-heat the oven to 350° F.
- Cream 1 Cup of peanut butter with 1 Cup of granulated sugar.
- In a separate bowl, beat 1 egg, and then add it to the peanut butter mixture, along with 1 teaspoon of baking powder.*
- Roll the dough into small balls, place them on a greased cookie sheet, and flatten them with a fork. The dough will puff up, so leave plenty of space in between the cookies.
- Bake the cookies for 10 minutes at 350° F.
- Let the cookies cool for 2 to 4 minutes on the cookie sheet, and then transfer them to a rack to finish cooling.
To keep the cookies gluten free, buy gluten-free baking powder at a specialty store, such as Sydney’s Health Market, Moorhead, Minn., or possibly in the gluten-free baking section of your local grocery.
Or you can make your own gluten-free baking powder! For 1 teaspoon of baking powder, mix 1/2 teaspoon of cream of tartar, 1/4 teaspoon of baking soda, and 1/4 teaspoon of cornstarch; or mix 1/4 teaspoon of baking soda with 5/8 teaspoon of cream of tartar. Make only as much as you need at the time, because it doesn’t keep at all well.
