This combination of ingredients made a particularly nice lunch salad. I served it cold, but one could warm the chicken breast. The salad dressing also was cold.
- Organic “Baby Herb Salad” greens
- 3 oz cold roasted chicken breast, chopped
- 4 green onions, chopped
- 1 hardboiled egg, sliced
- 1/2 Granny Smith (green) apple, sliced
- to taste, Newman’s Own Lighten Up Sun Dried Tomato Dressing
Note: I have also put this particular Newman’s Own dressing on a beef roast before cooking. If you use enough of it and don’t overcook, it tastes wonderful!
